  1. Soak the noodles: Place the rice noodles in a large bowl and cover with hot water. Let them soak for at least 15 minutes, or until softened. Drain well.
  2. Make the sauce: In a small bowl, combine all the Pad Thai sauce ingredients and whisk until well blended.
  3. Prepare the protein: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken (or other protein) and cook until browned and cooked through. Remove and set aside.
